i am surprised at how well we have adjusted to vegan-ism. Costco has a lot of organic and all-natural foods, and vegan and vegetarian selections. we found dried spinach snacks, frozen organic falafel balls, ready-to-eat organic tabouleh, organic Rice Milk, and bulk organic quinoa. (spell-check hates that last sentence by the way.) i've found coconut milk, tofu, organic vegan cheeses, and vegan chocolate at Kroger, and the freshest organic produce at our Super Target. so, planning my menu, grocery shopping, and eating vegan has been easier than i thought. my kids are doing well as little vegetarians, still consuming dairy (organic only). and, after 18 days of going vegan, hubby is now slowly working dairy and meat back into his diet.
