for 30 days, we will not eat any animal or animal by-product. no meat, no fish, no poultry, no dairy, no eggs, no honey. i'm calling it the August Vegan Experiment.
we generally try to eat healthy and be careful of what we put in our bodies. we live a pretty healthy lifestyle. by going vegan we are just upping our game. sticking to a plant-based diet for at least one month will cleanse our bodies of any toxins and hopefully train our bodies to crave healthier foods.
it all started last week when we were at a restaurant and i was having a hamburger for the 3rd time in 4 days. that is so unlike me, but we were on vacation and it seemed like every place we went was "famous" for their burgers.
i was thinking about how often we eat meat and dairy products compared with how often we eat fruits and vegetables. and even though we eat quite a bit of fruit, and all organic and local meats, i was not happy with the imbalance.
the more i thought about it and prayed about it, the clearer it became that we were in need of a drastic diet change. the whole family. for a whole month.
at the end of 30 days, we will evaluate how we feel and go from there. i think it will be interesting to see the impact this has on our health, our attitudes, our sleep, our bodies, and our budget.
we stocked up on fresh organic produce, vegan soups, tofu, beans, and legumes on our weekly grocery trip. i've been scouring the internet and pinning vegan recipes on Pinterest. i really am excited about our weekly menu!
m: kale chips & lentil soup
t: vegetable pot pie
w: espinacas con garbanzos
h: tomato cucumber salad

i will share our favorite recipes as we go along!
have you ever gone vegan? vegetarian? do you have any favorite meatless and dairy-less recipes to share? i'd love to hear from you!
