this week's menu
if it were completely up to me, we would eat tri-color pasta salad, goat cheese spread on garlic toast crackers, fresh baked tortilla chips with homemade pico de gallo, and gaspacho from now until July. the Spring weather just makes me want easy and light meals! but the Mr. and the littles would probably starve and run away from home. north. towards Wichita Falls, most likely. so...for the sake of keeping my family healthy and in tact*, i give you this week's {uninspired} menu. i promise a better plan next week.
monday: layered chicken enchiladas {modified recipe via The Atwoods}
tuesday: spaghetti & homemade meatballs
wednesday: crockpot meatloaf {rollover from last week}
thursday: chicken burritos {recipe via Mrs. Happy Homemaker}
friday: BLT sandwiches
weekend: leftovers & frozen pizza
*completely kidding about my menu having the ability to turn my family against me. although they would be really grumpy if i served only pasta salad, goat cheese, pico and gazpacho for 4 months.
