edible snowballs {recipe}


thanks to the Big Freeze of 2011, we've been trapped inside for 4 days now. and i have no intentions of going anywhere until the reliable Texas sunshine shows her big hot face again and melts the ice to smithereens.

in the meantime, we're getting creative in our methods of combating cabin fever. one thing we like to do to stay warm and busy is get in the kitchen and get to work!

yesterday we made EDIBLE SNOWBALLS, a fun and easy no-bake recipe i found at Confessions of a Homeschooler and Just A Moment in Time. they are so simple and really yummy. sweet and peanut-y. a great afternoon snack.

Edible Snowballs Recipe
ingredients:
3/4 c. peanut butter [i used organic creamy]
1/2 c. honey [mine was frozen so i used 1Tbs honey + 1/4c organic maple syrup]
1 tsp. vanilla extract
3/4 c. oatmeal [uncooked, not instant]
1/4 c. graham cracker crumbs [we used crushed Annie's Bunny Grahams] 
in a separate bowl- powdered sugar [about 1 cup]



instructions:
mix all ingredients together [except powdered sugar] until well blended. form into balls. [small enough to pop in your mouth]. roll the balls one at a time in the bowl of powdered sugar. eat and enjoy!
