salted caramel hot chocolate



ready for some fall-time meals? i am! in addition to "the pumpkin dessert" and copycat Starbucks salted caramel hot chocolate, here are the meals i'm serving this week with links to the recipes (most of them are from Living Locurto's Weekly Meal Plans):
tuesday: rotisserie chicken
wendesday: tomato soup and grilled cheese sandwiches
i fell in love with Starbucks Salted Caramel Hot Chocolate last month and i wanted to make it at home since i have a big canister of Starbucks Hot Cocoa Powder. i found Dianne's recipe, which is perfectly easy and uses better ingredients than some other "copycat" recipes. i made 2 batches of it this weekend- it's THAT delicious!

Salted Caramel Hot Chocolate (pictured)
hot chocolate:

4 c milk (i used organic skim milk)
1 c organic cane sugar
1 c Starbucks Hot Cocoa Powder (available at Costco this time of year, or you can use baking cocoa powder) 
have on hand: whipped cream and sea salt 
in a medium sized pot whisk together milk, sugar and cocoa until completely blended over medium heat until steaming, but not boiling, stirring occasionally. 
homemade caramel: 
1 8oz can sweetened condensed milk
1 c natural brown sugar 
in a small pot over medium heat, melt brown sugar in sweetened condensed milk until smooth, stirring frequently. it will melt smooth very quickly- be careful not to burn your pot! 
fill your favorite mug with hot chocolate. top with whipped cream. drizzle warm caramel over the top and sprinkle with a pinch of sea salt. sit down with a book and a blanket and enjoy your delicious beverage.

on my to-bake list? Amy's very popular Fall-time dessert,
15 oz. can pumpkin
1 can evaporated milk
3 eggs
1 c. sugar
4 t. Pampered Chef Cinnamon Plus (or 2 tsp. cinnamon and 2 tsp pumpkin pie spice)
1 yellow cake mix
3/4 c. butter
1 1/2 c. chopped nuts (walnuts or pecans)


combine first 5 ingredients. pour in a greased 9×13 pan. crumble yellow cake mix on top. melt butter; pour evenly over all. sprinkle with nuts. bake 1 hour at 350 degrees. serve with whipped topping.
